½ can dark beer (500ml)
6 tbsp. Bull's-Eye Red Hot Chilli Sauce
For the rub
1 tsp. mustard powder
1 tsp onion powder
1 tsp smoked paprika powder
1 tsp. coriander powder
1 tsp. cumin powder
1 tsp garlic powder
1 tsp Sunflower oil

METHOD

Mix all the ingredients for the rub. You’ll want all of these powders in your spice rack. A professional rub is the difference between an amateur beer-can chicken BBQ and the real deal.

Dry the chicken with some paper towels. Rub it inside-out with sunflower oil and your spice rub and leave for one hour. Those strong flavours need time to do their thing. And you need time to catch up with the gang while the chicken soaks in that BBQ flavour.

Fire up the BBQ at 180°C.

Open the can of beer and remove half of its contents.

Place the chicken on the can of beer so it’s standing upright with the can as a stand. Brush the chicken with as much Bull's-Eye Red Hot Chilli BBQ Sauce as you can.

Put the chicken on a metal tray on the BBQ and cook for about 75 minutes. Brush with even more BBQ sauce after 30 minutes. The more the merrier. And tastier. You’ll know when it’s done, but to be sure to insert a knife and check the juices run clear.

Rest the chicken for 10 minutes and then remove the can. Serve hot with your choice of sides. You can’t go wrong with slaw and fries.

Preheat the BBQ to 200°C.
